self absorbed me

This sickness, what ever it may be, is really taking a toll on me, not only physically either. Not being able to do most things I want to get done, or go out and do has put me in a constant state of feeling very agitated and trapped. 5 and a half weeks since I initially got really sick and went into hospital a few days later. Still another 2 and half to go until we go back to Adelaide to hopefully get some answers.
My beautiful little family have been so supportive, even my munchkin has been pretty patient through it all and will most of the time be happy with whatever is happening in the house. My man is incredibly supportive (tears!), leaving work to take me to appointments, doing the shopping for me, helping me around the house and looking after Jamie, he is never worried about the fact that the house is so messy because I don't have the energy to get it clean. He is just amazing! I could go on forever about him.
On a different note, Munchkin is sick.. as sick as he gets anyway, which is complaining about a sore throat and how annoying it is to cough all the time, but still racing around pretty much as his normal self! Really wish I could steal some of his energy.
Hope this illness disappears soon so I can stop being so self absorbed and get back to my normal life that I am missing so much!

Saw these questions on Facebook and thought I would find out what Jamie answers were:

1. What is something Mummy always says to you? - Clean up! (I hope this isn't so but I had just asked him to clean up the lounge before he was allowed to play on his computer)

2. What makes Mummy happy? - Cuddling.

3. What makes Mummy sad? - Um... grumpy.


4. How does Mummy make you laugh? - doing funny things (like what?) - like jumping and flipping .. (can't say I've been doing much of that lately but I'm sure it would be funny!)

5. What was Mummy like as a child? - Happy.

6. How old is Mummy? 6, 7, no 17, 18!

7. How tall is Mummy? 1-teen. (umm sure)


8. What is Mummy's favourite thing to do? do uni (oh yay!)


9. What does Mummy do when your not around? um I don't know. (wouldn't try and guess)

10. If Mummy becomes famous what will it be for? turtles... (ok weirdo)

11. What is Mummy really good at?  running (I WISH!)

12. What is Mummy not very good at? flipping.

13. What does Mummy do for her job? Uni.

14. What is Mummy's favourite food? chicken

15. What makes you proud of Mummy? riding your bike when I was little in the seat in the back of your bike.

16.  If Mummy was a cartoon character, who would she be? Lightening McQueen (of course, is there any other?)


17. What do you and Mummy do together? Hang up the washing, playing on the computer playing harry potter, playing games.

18. How are you and Mummy the same? have the same grumpy face (lol!)

19. How are you and Mummy different? Your big and I'm small


20. How do you know Mummy loves you? when I'm cuddling you and kissing. I love you Mum (aww)


21. Where is Mummy's favourite place to go? To Adelaide. and sometimes Mum wants to come to Cobar.


Pineapple and Carrot cakes

Still working out how to use this blog page.
A friend of mine asked for a recipe for cupcakes I made with pineapple and carrot in them.
Here is it (really yummy and scrumptous recipe!)

Mini Pineapple and Carrot Cakes

prep time: 10 mins. Cooking time: 15 mins. Makes 24 small cupcakes (or 12 larger ones).

1/2 cup plain flour
1/2 cup self raising flour
1/2 teaspoon bicarb soda
1/4 cup caster sugar
1/2 teaspoon ground cinnamon
225g can crushed pineapple, drained.
2/3 cup firmly packed finely grated carrot.
1/3 cup vegetable oil
1 egg. beaten lightly.

Cream cheese icing:
125g cream cheese, softened
1 tablespoon icing sugar
1 teaspoon lemon juice
2 teaspoons milk

1. Preheat oven to moderate. Green muffin pans.
2. Sift flours, soda, sugar and cinnamon into medium bowl.  Add pineapple and carrot; stir in combined oil and egg mixture (do not over mix).
 3. Divide mixture into muffin tray. Bake for 15 mins (i found this enough for 12 bigger cakes as well). Stand for 5 mins in pan before turning onto wire rack.
4. Meanwhile combine ingredients for cream cheese icing in bowl and spread over cooled cupcakes.

Intro

This may just be another procrastination from the things I should be doing like uni or cleaning but I wanted to record things, especially the growth of my beautiful boy, who I will nickname Munchkin for this blog.
Life never seems to be boring for me, there are always dramas of some sort happening and I long for the day when life will be peaceful for a while.
The moments dramas include me being ill and no one seems to know whats wrong. I am playing a painful waiting game, the next investigation is a colonoscopy which I have to travel to Adelaide for in July.. until then its a hefty dose of medications.
Also Munckin's father (who has not contacted us in 5 months after a couple of years of extreme unpleasantness) has started his contact again, though I am not replying at present and I am looking for a new lawyer to try and handle it all.
On the up side my head has been clearing a little after being very stressed and sick with a stay in hospital and I am feeling positive today. Our wedding and honeymoon are getting closer and they give me a very excited smile whenever I think of them.
Munchkin is happy today as well and the sun is shining and warming the place up after such cold weather.
I am still unsure as to how much I will share on this blog, I will play it by my mood (and how much I am procrastinating uni work).
